Knepp Common Sorrel - Rumex acetosa
Common sorrel is plentiful around the park and, to me, a very attractive native plant and a favourite to the foragers at Knepp. The leaves are also edible to us while young but toughen with age. I remember trying them as a child and pondering on whether the small red leaves at the top of the plants or the juicier green leaves at the bottom of the plant were sweeter. In all honesty, both are quite sharp, but to adult tastebuds delicious in salads in spring.
Drawn in natural ink on sustainably sourced handmade paper from Bhutan
